Ingredients
8 thin slices of tofu
4 small ciabatta rolls (65g each)
1 medium onion, finely chopped
1 tablespoon of olive oil
Sauce, green onions, and salt to taste
2 cups of sliced shiitake mushrooms
1 tablespoon of soy sauce (shoyu)
4 tablespoons of orange juice

Pat the tofu dry between two paper towels for an hour

Grill the tofu in a non-stick skillet until lightly browned

Cut the rolls in half lengthwise
Toast them in the oven at medium temperature for 10 minutes to slightly toast them
Remove from the oven and set aside

In a pan, sauté the onion in olive oil and add the herbs, salt, mushrooms, soy sauce, and orange juice
Let it simmer on low heat for 10 minutes, stirring occasionally, or until the liquid reduces
Place the tofu on the roll and top with the mushroom mixture
Cover with another roll slice and serve
