1 ripe avocado (about 700g)
1 tablespoon of lime juice
2 hard-boiled eggs
3 green scallions, well washed and cut into thin slices
Salt and black pepper to taste
4 slices of whole wheat bread
To garnish:
tomato slices
2 hard-boiled eggs, cut into thin slices
some fresh parsley leaves

Peel the avocado and remove the pit
Place it in a bowl and mash well with lime juice
Dice the eggs and add them to the avocado, along with the green scallion
Season to taste with salt, black pepper, and additional lime juice if desired
Spread over the bread slices and cover with tomato slices, egg slices, and fresh parsley leaves
Serve in 4 portions.
