Boil the potatoes in salted water
Drain and mash with a fork. Reserve
Cut the peppers in half, remove the seeds, and slice into thin strips
Heat the olive oil and sauté the chopped onion
Add the pepper and sauté for another minute
Add the mashed potato and lightly beaten eggs
Stir and cook until golden brown.
