1/2 cup of tofu (soy cheese, available at supermarkets)
1/2 cup of finely chopped onion
1 clove of garlic mashed
1 tablespoon of olive oil
1/2 cup of small grated carrot
1/2 teaspoon of ground ginger
approximately 1/4 cup of breadcrumbs
1 small egg
1 tablespoon of soy sauce
1 tablespoon of water
Salt to taste

Salt to taste
In a non-stick skillet, sauté the garlic and onion in heated olive oil
Add the carrot and cook until it's tender
Remove from heat and add the ground ginger, breadcrumbs, and beaten egg
Season with salt and mix until a homogeneous mass forms
If needed, add more breadcrumbs
Shape into patties and place on a greased baking sheet
Brush with soy sauce diluted in water and bake for 20 minutes at medium oven temperature.
