1 lizard weighing around 2 kg (cut into 2 parts if necessary)

Clean the meat, season with salt and black pepper, and coat it in wheat flour
Heat the olive oil in a large frying pan
Brown the meat with garlic in the hot oil, turning it occasionally
In a pressure cooker, heat the butter and sauté the onions, carrot, and smoked bacon
When the meat is well browned, add it to the pressure cooker with the vegetables
Let it cook for 5 minutes
Add water or red wine and the remaining ingredients
Close the pressure cooker and let it simmer for 30 minutes, or until the meat is tender (add a little more water if it's still tough, and cook for a few more minutes)
Serve the meat sliced with the sauce passed through a blender
Serve 12 portions.
