In a medium saucepan, mash the black beans and rice with a fork
Check the seasoning
Add the all-purpose flour, egg, and parsley and whisk over medium heat until it detaches from the bottom
Remove from heat and let cool
With floured hands and the help of a spoon, shape 3 cm diameter balls
Dip in flour and reserve
Heat the vegetable oil to high heat and fry the fritters in batches until golden brown
Drain on paper towels and serve immediately.
