8 fresh large sardines
3/4 cup chopped onion
1 cup red bell pepper, diced
1 cup mayonnaise
1/2 cup heavy cream
Salt and black pepper to taste
2 sprigs of rosemary
8 fresh large sardines

Clean the sardines and separate into fillets
Cut each fillet into 3 pieces
Chop the onion
Dice the red bell pepper without removing the skin
Mix the mayonnaise and heavy cream
Add the chopped onion and bell pepper
Season with salt and black pepper
Add the rosemary sprigs
Combine the sardines
Place in a glass jar, seal, and refrigerate for at least 24 hours before serving
Serve as an appetizer
