1 tablespoon of grated ginger
Mango Sauce
1 small mango, pureed in a blender

Quickly sear the tuna on all four sides in a non-stick pan coated with oil, leaving the interior raw

Transfer the tuna to a plate and place it over an ice bath to stop the cooking of the meat

Cut the tuna into five slices
Mix all the ingredients from the tataki sauce and marinate the fish pieces in it for 20 minutes
Leave to rest for 20 minutes

Wash the passionfruit and cut five thin slices

Arrange the mango sauce on the plate and place the tuna slices, alternating with passionfruit slices.
