1 kg of cod or sea bass
1/2 cup of lemon juice
2/3 cup of diced tomatoes
1/2 cup of finely chopped green pepper
1 red bell pepper, finely chopped
1 onion, finely chopped
1 clove of garlic, minced
1 tablespoon of chopped fresh parsley
1 teaspoon of salt
1 pinch of black pepper
1/4 cup of vinegar
1 kg of cod or sea bass

Cut the fillets into strips about the length of a finger and place them in a bowl
Add the lemon juice and mix well to ensure the fish is evenly coated
Refrigerate for 8 hours
Drain well and mix in the remaining ingredients, spreading them over the fish
Serve chilled, garnished with 6-8 pieces
The lemon juice 'cooks' the fish, so it does not need to be taken to the fire.
