2 large, ripe papayas

Peel the papayas, remove the seeds and cut the flesh into cubes
Add to a blender, combine with the lime zest and lime juice, and blend until smooth
Transfer to a serving dish
Beat the egg whites until stiff, gradually add the sugar while continuing to beat until stiff peaks form
Using two tablespoons, shape into small balls and place in a deep frying pan with simmering water (the water should not be boiling)
Cook for 30 seconds on each side
Remove the balls with a slotted spoon and place them on paper towels
Arrange the cooked balls on top of the papaya creme in the serving dish
Serve chilled
