Add the pineapple and mix well
Form the tart crust and prepare the lattice strips
Fill the tart with the pineapple mixture
Cover the filling with the lattice strips, forming a pattern, and trim the edge
Bake in a strong oven (220°F) for 10 minutes
Reduce the heat to moderate (170°F) and bake for an additional 35 minutes, until the filling begins to bubble and the crust is golden brown
Serve this tart warm
Tip: Do not use the knife used to peel the pineapple to cut or chop it into slices
