1/4 cup (50 g) of butter
One medium onion, finely chopped
1/4 cup (30 g) of all-purpose flour
200 g of asparagus, scallions removed and chopped, or 200 g of fresh asparagus, chopped
1 liter of basic beef broth (see previous page recipe)
1 cup (240 ml) of milk
To taste salt

In a pot, melt the butter and sauté the onion until it starts to brown
Add the flour and stir until golden brown
Gradually add the asparagus and beef broth while stirring constantly
Add the milk, stir, and cook for 8 minutes or until boiling and thickened
