Chop the onion, garlic, carrot, and tomatoes, then sauté in 1 tablespoon hot olive oil
Add the white wine, port wine or brandy, and water
Cook the well-rinsed shrimp in this broth
When the shrimp are cooked, remove the pot and add rice with salt and pepper to taste
Peel the shrimp and clean them
Pass 3/4 of the shrimp through a grinder and return it to the soup
Simmer the pot covered until the rice is cooked
Strain the soup
Before serving, combine the remaining olive oil and whole shrimp, reserved
Serve in four portions.
