4 to 5 large onions
1/3 cup unsalted butter
6 cups chicken broth
2 tablespoons Cognac or brandy
salt and black pepper to taste
6 slices of French bread
1 cup grated Parmesan cheese
toasted bread for serving

Peel the onions and slice them into thin rings
Melt the butter or margarine
Add the onion, cover, and cook slowly until caramelized and golden, about 1 hour
Remove from heat
Add the broth and Cognac
Bring to a simmer and let cook for 30 minutes
Check seasoning and add salt and black pepper to taste
About 5 minutes before serving, butter each slice of bread and sprinkle with cheese (1/2 cup)
Place under broiler until golden brown
Serve in small ramekins
Top each ramekin with a toasted bread slice and remaining cheese
Broil for an additional 5 minutes.
