1 1/2 tablespoons of butter or margarine
2 medium onions, cut into thin slices
1 1/2 tablespoons of all-purpose flour
2 1/2 cups of beef broth
Salt and black pepper to taste
Chopped fresh parsley
2 slices of French or Italian bread (filé)
2 slices of cheese (such as Cheddar, Gouda, or Grana Padano)
2 tablespoons of grated Parmesan cheese

Melt the butter
Add the onion and cook over medium heat for about 10 minutes until it's golden brown but not too dark
Add the flour and cook over low heat for 2 to 3 minutes
Gradually add the broth, whisking constantly until thickened slightly
Cover and simmer over low heat for 15 minutes
Season to taste
Toast the bread slices in the oven
Top with cheese and sprinkle with Parmesan cheese
Let it sit in a warm oven to melt the cheese slightly
Serve in bowls with the broth poured over the top, garnished with parsley
Serve hot.
