3 lbs of peeled and chunked sweet potato
1 1/2 liters of water
1/2 teaspoon of salt
1/4 cup of thyme leaves

Boil the sweet potato in water for 15 minutes or until tender
Drain and season with salt and thyme

Using a knife, remove some of the fat layer, leaving about 1 cm thick
Mix the thyme, salt, and garlic, and season the meat

Preheat the oven to high heat
When hot, place the meat in a baking dish with the fat side down
Roast for 30 minutes, then flip the beef
Add the sweet potato with thyme and return to the oven for an additional 30 minutes
During this time, add water gradually, scraping the bottom of the baking dish to obtain a dark sauce
Remove from the oven and serve immediately.
