Cook the broccoli flower in boiling water, uncovered, until tender
Strain and puree the broccoli flower with a liquidizer or blender, adding it to the liquid; combine with milk
Melt the butter, add onion and sauté until translucent but not browned
Add all-purpose flour, salt, and pepper, mixing well
Add the milk mixture gradually, stirring constantly, and cook for 5 minutes
Pour slowly over the egg yolk and mix well
Serve in soup bowls and garnish with cheese
