Chop one onion into slices and dice the other
In a pot, combine the carrot, sliced onion, and celery
Add the beef broth and cook over medium heat until the vegetables are tender
In another pan, fry the diced onion with olive oil and smoked ham
Add the kale and cook for 10 minutes
Before serving, beat the eggs with Parmesan cheese and add to the pot
Combine the kale, beef broth, vegetables, parsley, and mix well
Serve immediately
