500 g of black beans
1 tablespoon of olive oil
3 tablespoons of chopped onion
2 pears, cut into cubes
1 and 1/2 cups of orange juice
1/2 teaspoon of ground cinnamon
Salt and pepper to taste

Cook the black beans with water in a pressure cooker until tender
Drain and reserve 2 cups of broth
Heat the olive oil and add the onion and salt
Cook until the onion is soft
Add the chopped pear and 1 cup of cooked broth and let simmer for 10 minutes over low heat
Add the black beans and stir well
Mix in the orange juice, pepper, cinnamon, and adjust the seasoning
Stir and remove from heat
Let it cool and then transfer to a blender
Blend until smooth and strain through a sieve
Return to the pot and add the remaining broth to achieve the desired consistency, thicker or thinner
Simmer for an additional 5 minutes and serve decorated with pear slices and parsley.
