Wash the tomatoes thoroughly, remove the seeds, and chop coarsely
Peel and slice the onion
Wash the sweet basil and slice it
Reserve the green stem for garnish, if desired
In a medium saucepan melt the butter or margarine
Add the onion and stir with a wooden spoon until softened, about 8 minutes
Add the tomatoes, sweet basil, broth, salt, and pepper
Cover, bring to a boil, then reduce heat and simmer for 20 minutes, or until the sweet basil is tender
Remove from heat and let cool slightly
Blend in 2-3 batches with an electric blender or food processor
Wash the saucepan
Place a strainer over the saucepan
Strain the soup well with a spoon
Add milk and reheat as needed
Check seasoning, then serve hot - 6 servings.
