300g of cabbage in cubes
1/2 liter of water
1 tablespoon of olive oil
1 medium onion, finely chopped
2 cups of orange juice
Salt to taste

300g of cabbage in cubes

In a pot, heat the water and cook the cabbage until it's very tender
Drain the water
Heat the olive oil, sauté the onion and then add the cooked cabbage
Season with salt
Let it cool down
Blend the sautéed cabbage and onion with the orange juice in a blender
Once chilled, refrigerate
Serve cold with croutons and parsley sprinkled on top
