Bring the water and sugar to a boil over medium heat
Stir only until the sugar dissolves
Remove from heat, let it simmer for 5 minutes, then remove from heat
Let it cool slightly
Blend the mashed peaches with lemon juice in a blender or food processor
Add the cooled syrup and water mixture, then let it chill
Chill in the refrigerator or freezer until partially frozen
Once partially frozen, add the whipped egg whites and mix gently
Freeze until firm
To serve, scrape with a spoon or fork onto a plate, serving 10 plates.
