1 Preheat the oven to 220°C
In a baking dish, arrange the papaya rounds
2 Mix together the orange juice, cinnamon, and honey
Pour the mixture over the papaya and bake for 10 minutes or until golden
3 Whip the egg whites until snow-like, add cornstarch and continue whipping until stiff peaks form
4 Remove the papaya from the oven
Let it cool, top with meringue and sprinkle with lime zest
5 Return to the oven and let it caramelize
Serve immediately.
