In a saucepan, combine the honey, yogurt, and ricotta cheese over low heat until warmed through without boiling
Add the dissolved gelatin
Beat the heavy cream with apricot puree in a blender until stiff peaks form
Mix into the yogurt
Refrigerate for an hour
