Place the mango, sugar, and half a cup of water in a saucepan
Bring to a boil, then reduce heat and simmer for 20 minutes
Remove the mango with a slotted spoon and transfer it to a bowl
Add lemon juice to the saucepan and cook until the liquid is reduced by half
Combine the mango and lemon juice mixture, then stir well
Pour into clean jars, seal, and let cool
Store in the refrigerator
Serve pure or over ice cream or cakes
Yields 4 cups.
