Hydrate the gelatin sheets with a little water
Aquatic 1/3 of the cream and use it to dissolve the gelatin. Reserve
Beat the egg yolks, sugar, and vanilla extract. Reserve
Beat the cheese until airy. Reserve
Beat the remaining cream until stiff peaks form
In a bowl, combine the cream with gelatin mixture cooled to room temperature
Add the cheese and cream
Shape into balls and refrigerate until firm
Unmold, drizzle with Strawberry Fruit Sauce [recipe below], and garnish with fresh strawberries

Combine all ingredients in a pot and bring to a boil
Reduce heat and let it reduce by half
Turn off the heat and let it cool
Pulse in a blender, strain, and store in the refrigerator in an airtight container.
