Sift together flour, baking soda, and cinnamon
Set aside
Melt the butter, brown sugar, and regular oats until smooth
Beat in the egg until well combined
Gradually add the sifted ingredients and mix until a dough forms
Fold in the quick-cooking oats
Drop rounded tablespoonfuls of the dough onto greased baking sheets, leaving about 7 cm between each cookie
Bake at 150°C for 15 minutes
Let cool for 5 minutes before carefully removing each cookie with a spatula
Yield: About 60 cookies.
