Cook the rice in four cups of water until it is half-cooked
Peel and dice the sweet potatoes
Combine the sweet potatoes, grated carrot, cinnamon, and lemon zest with the rice
Cook in a covered pan over very low heat, stirring frequently, until the rice is cooked
Refrigerate and serve chilled with additional grated carrot and heavy cream
Serve in 4 portions.
