Soak the gelatin in cold water for a few minutes
Let it sit for 5 minutes to soften
Heat the mango puree until it's warm, but not boiling
Add the sweetener and softened gelatin
Stir until the gelatin is fully dissolved
Place the mixture in the refrigerator to chill and thicken
In a separate bowl, combine 1/3 cup of water and lemon juice
Pour this mixture over the chilled mango foam and stir gently
Pour into individual serving cups
Refrigerate for at least 6 hours before serving.
