Beat the egg yolks with sugar until smooth and creamy
Gradually add the softened butter and beat well
Add the sifted cocoa, crushed biscotti, and rum
Mix until just combined
Shape into a 24cm long salami shape and wrap tightly in plastic wrap
Refrigerate for at least 1 day to allow flavors to meld
Unwrap and slice into desired portions
Serve with whipped cream or chantilly if desired
