1 Hydrate the gelatin according to the manufacturer's instructions. Reserve
Scald half of the milk and reserve
2 Beat in a blender the egg yolks, potato starch, vanilla, and confectioner's sugar
Add cold milk, beat again, then add hot milk
Beat until smooth
3 Transfer to a saucepan and bring to low heat
Add gelatin, stir until dissolved without boiling
Remove from heat and let cool, stirring occasionally
Add whipped cream to the chilled cream and mix gently
Pour into a greased mold and refrigerate for six hours.
