3/4 cup of strong coffee

3 tablespoons (of a pinch) of vanilla extract
1 1/2 cups of whipped cream

Combine the coffee with the sugar, bring to a simmer over medium heat
Continue cooking at high heat until it reaches the point of a soft ball
Beat the egg whites until stiff and slowly add the warm mixture, beating without stopping until the mixture is cold and firm
Add the vanilla and whipped cream in chives
Pour into a mold or ramekins and freeze
Chill for 1 1/2 hours.
