Mix together the yogurt, sugar, vanilla extract, and pineapple
Mix well
Place the mixture on a baking sheet lined with parchment paper and freeze until almost set
Once frozen, scoop the mixture into a bowl and add the egg white
Mix gently to combine
Beat with an electric mixer until light and fluffy
Return the mixture to the freezer until firm
Dish out 4-6 portions.
