Cut the mangoes in half lengthwise and remove the pits
Remove the pulp from one of the mangoes and reserve the skins in the refrigerator, wrapped in plastic film
Place the pulp, 2 egg whites, 1 cup of sugar, and lime juice into a blender
Blend at high speed until smooth
Pour into a 22.5 cm diameter mold
Repeat the process with the other mango
Cover the molds with plastic film and place in the freezer for about 6 hours
After that, fill the mango skins with the sorbet and return to the freezer for another hour
Serve well chilled.
