In a saucepan, melt the butter and add the flour
Mix well until a smooth paste is obtained
Add the milk gradually, stirring well
Heat over low heat, stirring constantly, until the mixture thickens
Remove from heat and add 1/2 cup of orange juice and grated peel
Add the cocoa powder
Beat the eggs until they thicken
Add to the chocolate mixture and stir vigorously
Beat the egg whites in a separate bowl until stiff peaks form, then add 1/4 cup of orange juice gradually, beating well
Add one portion of the soufflé base to the chocolate mixture and mix carefully
Add the remaining soufflé base and mix slowly
Pour into a buttered and floured soufflé dish with 2 liters of capacity
Bake in a moderate oven (170°C) for about 35 minutes
Serve immediately, optionally with whipped cream
Yield: 4 to 6 servings.
