Wash the spinach and drain
Add butter, water, and a pinch of salt to a pan
Cook over low heat for 10 minutes
Drain and let cool
Blend in a blender or food processor
Let it sit at room temperature for 10 minutes
Gradually add the egg yolks, mixing well
Add the Parmesan cheese and mix again
Preheat the oven
Beat the egg whites until stiff
Gently fold them into the spinach mixture
Pour into an ungreased 1-liter baking dish
Place in a hot water bath
Bake at moderate heat for 30 minutes.
