Sauté the onion in butter or margarine until softened
Add the flour and mix well
Gradually add the cold milk, stirring constantly, then add the spinach
Cook without stopping until thickened
Season with salt and black pepper
Remove from heat and add the egg yolks, mixing well
Beat the egg whites until frothy and fold into the mixture gently
Pour into a portable oven dish and bake until lightly golden
Serve immediately
