Preheat the oven, allowing it to reach a good temperature
In a frying pan, melt half the butter and add the onion
Cook until translucent
Add the mushrooms and cook for a few minutes
Add the tomato and cook slowly over 5 minutes
Add the parsley, thyme, breadcrumbs, salt, and pepper
Mix well
Stuff the fish with this mixture, without tightening it, and close the opening with toothpicks
Place the fish in an oven-proof dish lined with aluminum foil and season with lemon juice, white wine or water, salt, and pepper
Cover with the remaining butter and bake for approximately 40 minutes at a moderate temperature, basting occasionally.
