Heat the butter in a skillet until melted, then sauté the onions and parsley until they start to brown
Add the mushrooms and continue cooking until the liquid has evaporated
Place the ground beef in a large bowl
Add the onion mixture and the remaining ingredients, mixing well
Check the consistency
If it's too loose, add a little more breadcrumbs
If it's too thick, add a little more brandy
Mold the mixture into a round or square shape that fits in a pressure cooker
Cover with aluminum foil and place 2 1/2 cups of water in the cooker
Cook under pressure for 35 minutes, then let cool rapidly
Open the cooker and insert a knife to check if the beef is cooked
If not, close the cooker and cook for an additional 5 minutes
If desired, top with a mixture of 1 cup of mayonnaise and 1/2 cup of chopped fresh thyme, and serve in 16 slices.
