Preheat the oven to 250°C
In a large baking dish, place the tomato slices with the cut side facing up
Sprinkle with a mixture of olive oil and salt
Bake for 1 hour, then reduce the temperature to 200°C and continue baking for an additional 1 hour or until the tomatoes are dry
Remove from the oven and let cool
Cut into 6 portions
Serve as an appetizer or side dish.
