Hollow out the tomatoes, remove the seeds and turn them upside down on a lightly salted surface to drain well
Meanwhile, place all the other ingredients in a blender and blend until smooth
Season the tomatoes inside and out, stuff with the manjericão mixture, and then refrigerate
Serve the chilled tomatoes
