Cut the tomatoes in half lengthwise
In a large baking dish, place the tomato halves with the cut side facing up
Mix the garlic and salt together and sprinkle over the tomato halves
Bake in a hot oven (250°C), preheated, for 1 hour
Turn the tomatoes, reduce the temperature to 200°C, and continue baking for another hour or until dry
Remove from the baking dish with a spatula, place on a plate, and let cool
If desired, season with olive oil, vinegar, and minced garlic.
