200g pitted black plums in syrup

To make the cake batter, whisk together the heavy cream and butter with an egg
Add the flour and knead until it forms a dough that can be rolled out
Let it rest for 1 hour
Roll it out to a thickness of about 1 finger and fit into a tart pan
Bake in a hot oven
Let it cool
To make the filling, beat the egg whites until stiff peaks form
Add the sugar and continue beating until firm meringue forms
Add the black plums and heavy cream
Reconstitute the gelatin in cold water and dissolve in the plum syrup
Mix everything well and pour over the cooled cake
Serve chilled.
