Meatloaf:
300 g of ground meat
1/2 cup (chopped) of chicken liver amanhecido
1/2 cup chopped onion
5 green olives, pitted
1/2 cup chopped red bell pepper
1/2 cup tomato paste
Salt to taste
Butter for greasing
Breadcrumbs for dusting.
Filling:
3 cups cooked rice
100 g of grated Parmesan cheese

In a medium bowl, combine the ground meat, chicken liver, chopped onion, green olives, red bell pepper, half of the tomato paste, and salt
Grease a 22 cm diameter mold with butter and dust with breadcrumbs
Distribute the mixture in the bottom and sides. Reserve
Filling:
In another bowl, mix cooked rice, remaining tomato paste, and half of the grated Parmesan cheese
Mix well
Assemble in the greased mold with the meatloaf and press down
Cover with aluminum foil and bake for 25 minutes
Remove the foil, sprinkle with the remaining Parmesan cheese, and bake again for another 10 minutes
Let it cool slightly and demold.
