Preheat the oven to 400°F (quente)
Prepare the dough: in a large mixing bowl, combine the flour, butter, granulated sugar, and salt
Mix with the point of your fingers until you get a crumbly texture
Make a depression in the center, add the water and eggs, and mix with a fork in circular motions until the liquid is fully absorbed
Transfer to a smooth surface dusted with all-purpose flour and knead lightly until you get a homogeneous dough
Roll it out with a rolling pin until it's thin enough to fit into a 9-inch round cake pan
Cover with parchment paper and fill with coffee beans
Bake in the preheated oven for about 30 minutes, or until firm
Remove from the oven, remove the parchment paper and coffee beans, and let cool completely
Prepare the banana filling: in a bowl, mash all the ingredients together with a fork until smooth. Reserve
Prepare the chocolate filling: in a heatproof bowl set over simmering water (do not let boil), melt the chocolate, butter, and granulated sugar, mixing delicately. Reserve
In a medium saucepan, warm the heavy cream over medium heat
Add the chocolate mixture gradually, whisking constantly until smooth. Reserve
Spread the banana filling over the dough
Top with the chocolate filling, smoothing out slightly with a spatula
Chill in the refrigerator for at least 2 hours before serving
