250 g of mayonnaise
4 cups (ch) of wheat flour.
Filling:
3 tablespoons of oil
2 chopped onions
5 medium-sized sweet potatoes, peeled and cut into slices and cooked
Salt to taste
1 cup (ch) of chopped herbs (marjoram, sage, thyme)
3 beaten eggs
1/2 cup (ch) of milk
1/4 cup (ch) of grated cheese
250 g of mayonnaise

In a bowl, mix well the mayonnaise and flour to form a smooth and homogeneous mass
Roll it out with a rolling pin and line the bottom and sides of a 25 cm diameter tart mold
Set aside
Filling:
Preheat the oven to 200°C
In a pan, sauté the oil, caramelize the onion, mix gently the sweet potato and season with salt and herbs
Beat well the eggs, milk, and add the grated cheese
Fill the tart with the sweet potato and top it with the egg mixture
Bake in the oven until golden brown for approximately 50 minutes.
