Ask the fishmonger to clean the fish along its sides, removing the spine
Season the inside of the fish with salt
Place it in a large refrigerator-safe baking dish
Brush the fish with 1 tablespoon of mustard
Arrange the potatoes around the fish and reserve
Fry the bacon with onions in butter until golden
Add black pepper, cream, scallions, and mix well, scraping the bottom of the pan
Remove from heat
Add remaining mustard
Spread this sauce over the fish and potatoes
Cover with aluminum foil and bake at 200°C for 45 minutes
