Grate the coconut and cook it in a pan with sugar, stirring well until golden brown and smooth
Remove from heat and add chopped nuts and 7 egg whites beaten to snow
Butter three medium-sized round forms well; dust with flour, place the dough and bake in a moderate oven
Let cool slightly and demold
1st layer filling
Bring warm water to a boil with sugar and chocolate chips
Let cook until thickened and reduce slightly
Let the chocolate take on a gelato-like texture; you can also use pre-made chocolate or strawberry gelato
2nd layer filling
Bring the cup of warm water, 10 tablespoons of sugar to a boil
Remove from heat and let cool
Strain eggs through a fine-mesh sieve, add to the cooled sugar mixture, melted chocolate, and vanilla extract
Mix well
Heat again until thickened and serve.
