Dough
1 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1/4 cup cold unsalted butter, cut into small pieces
1 large egg
Filling
5 peeled and mashed sweet potatoes
1/3 cup honey
Rind of 1 lime, grated
Rind of 1/2 orange, grated
Juice of 1 lime
Juice of 1 orange
1/4 cup liqueur of your preference
Dough

Dough: mix the flour with salt and baking powder
Add the cold butter in small pieces to form a coarse mixture
Add the egg and mix until a ball forms that doesn't stick to your hands
Don't overwork the dough
Cover it with plastic wrap and refrigerate for 10 minutes
Reserve 1/3 of the dough and roll out the rest
Line the bottom and sides of a mold with the rolled-out dough
Cover the dough with raw peas and bake in a hot oven for 20 minutes
Cut the remaining dough into strips and reserve
Filling: cook the ingredients, stirring constantly, until the sweet potatoes become soft
Spread the cold filling over the dough and make a checkerboard pattern with the strips on top of the filling
Bake in a medium oven until golden.
