Beat the egg whites with salt until stiff peaks form
Gradually add the all-purpose flour, whisking continuously, then add the eggs that have been beaten
Slowly add the mascarpone cheese, cinnamon, lemon juice, and chopped nuts, always stirring carefully with a wooden spoon
Finally, add the peeled and grated mascarpone cheesecakes
Pour into an 11-inch greased springform pan and bake in a moderate oven preheated to 170°C for about 1 hour
Slice into 18 pieces.
